What makes Medéleon extraordinary begins in the groves. Our Koroneiki olives are hand-picked at the peak of early harvest, when they’re still vibrant green and polyphenol content is at its highest. This ancient Greek tradition, known as Agoureleo, yields less oil but delivers unmatched nutritional power and robust flavor.

Within the first 12 hours of harvest, olives are taken for cold extraction below 27°C. This rapid processing and low-temperature method preserves the aroma, protects the polyphenols, and ensures our olive oil maintains its exceptional quality from tree to bottle.

We harvest early November (The Agoureleo) when the olives are still green, firm, and packed with polyphenols.

This Agoureleo method is labor-intensive, each olive is hand-picked at its nutritional peak and produces significantly less oil per kilogram of fruit.

Cold-
extraction within hours

We process olives within the first 12 hours of harvest, minimizing oxidation and preserving freshness.

Cold extraction below 27°C preserves polyphenols and aromatics. We use modern two-phase centrifugal systems, no chemicals, no solvents, just mechanical pressing, that gently separates oil from fruit and water.

We bottle Medéleon in small batches to ensure uncompromising quality control and traceability. Each batch is carefully filled into dark glass bottles that protect the oil from light-induced oxidation, preserving its precious polyphenols and delicate aromatics.
